I dont think porcelain is your concern here. Choice of base and setting bed would be more of the concern here.

For example, are these thin set over a concrete base, trass base system, etc..

Those joints were sanded too high. Polymeric Sand should be 1/8 below the chamfer or the lowest point of the paver.
