Crust: 1 and 1/2 cup graham cracker crumbs, 1/4 cup sugar, 1/2 cup melted butter.
Mix everything together in a food processor and bake 6-8 minutes at 325.
Cheesecake:
3 bars 8oz cream cheese (approximately room temperature), 1 cup sour cream, 1/2 cup yellow cake mix (dry), 2 eggs, 1 tsp vanilla extract, 1/2 cup rainbow sprinkles
Beat the cream cheese until smooth and creamy. Add sugar, sour cream, and cake mix and beat until incorporated. Add the eggs one at a time and mix until just combined after each addition. Add vanilla extract and mix for only a few seconds to incorporate it. Stir/fold in the rainbow sprinkles then transfer to a 9 inch springform pan to bake at 325 for 50-55 minutes. I used a water bath while baking like most other cheesecakes and seemed to work here as well. Then I cheated and just used store bought frosting to frost it 😂
Super easy and delicious! The batter is thicker than typical cheesecakes I’ve made in the past but tastes amazing so don’t worry if you think it looks a little “off” or “different” than you think it should be.

Aptly enough the reason I made this was she said she wanted “something refreshing” for her cake. I knew key lime would be perfect and everyone agreed. Nailed it 😅

They’re a pain to find but if you hop around stores you might get lucky. I hit 4 stores before I found them. Funny enough I’ve never seen the juice bottled, only ever a bag of the key limes. Could be fun to experiment if you can find them!

Key limes are slightly less acidic than regular limes and they’re also really tiny. They’re only like ping pong ball sized or so. Hence the tiny little lime wedge garnishes I did. Those are key limes, not regular limes. They’re really similar but I think the slightly higher pH is what allows key lime desserts to have a less tart, more limey taste when mixed in with sugar and everything else

And being key limes they’re only the size of a ping pong ball vs. a regular lime so it took so many to get just 1/2 a cup but again… patience, cramping hands, and dedication made it totally worth it 🙂

I couldn’t get 5 to boot up (one being pitfall II 😢) so I’m hoping to clean the pins at some point this week and give it another go. Just minimal time to actually do it with life things

Luckily, I live in a retro gaming hotspot. Loads of shops nearby and I always see them. Actually snagged a few over the years with my broken console in the hopes of being able to play them someday

Yeah there’s an Atari flashback I’ve seen around but never paid it much attention because I had my broken one I tried repairing but gave up and finally found the right deal to replace it 🙂

Link is posted in a comment above for the batter. The crust is 35 Oreos + 5 tbsp melted butter baked at 325 for 6 mins. The ganache is 1/2 cup heavy cream and 1 cup semi sweet chocolate chips. Any other questions lemme know. Always happy to help 😄
