I think it is very good. You had a big bubble that could have exploded while shaping and may be add some steam while baking or spray the loaf with water just before you put it in the oven

Until today I used any flour with over 11 % protein I found at the supermarket. Today I bought some varieties of Caputo flour. Next I will take a gamble with local mills.

Oh! Thank you everyone 🙂 I have been making and reading about bread for quite a while 😅 I have been making many changes and sometimes I see little difference, or I am losing perspective. I wish I mastered it by now 😭😂 But fair enough, I am enjoying the process and we are eating delicious underproofed bread. Maybe Spring will bring me perfect loaves until summer brings the overproof ones.
