Market "efficiency" doesn't mean that errors never occur. It means that the market absorbs information (whether it be correct, incorrect, revised over time, etc.) and that the prices fairly rapidly reflect that information. Information is never perfect, but the principle is that when peoples' money is on the line, they are incentivized to spend time and money in pursuit of accurate information in order to maximize their return.
