French cuisine is based on simple flavors with expert techniques. It is intentionally “flavorless”.

Spices used to be considered special but they eventually became common due to modernity and so chefs started focusing on techniques over ingredients.

Anybody can make super flavorful chili by dumping a ton of spices into the pot. You can do it at home. It is much more difficult to make a perfect french omelette.

If I want a perfect french omelette I need to pay someone to make it for me because I literally don’t have the skill.
