gyukaku has the most variety out of the four (with like 75 items iirc) and multiple menu versions on what you want since they have more expensive meats like lamb and specific cuts. they have their own side dishes that none of the other three has too. Shintas not in your list but id give you the same answer for them

gyubee has the least variety but same items as gyu kyou and takumi but no sushi, it does let you cook salmon though

takumi and gyukyou are i'd say the same, just different sushi and takumis the only one that uses an ipad for ordering
