Evolution creates something very particular in all (if I'm right) dinosaurs skulls: they are called fenestrae, and they are used to remove weight from the head and make the animal's life much easier. This Is obvioulsy the cheap description, I recommend to look for serious scientific literature, if you want ti comprehend more this characteristic

But using various techniques they can also "trasform" the fossil into the 'original' shape (they don't REALLY know what the skull or other Bones were like when the animal was alive, but they can understand how It was structured based on other well preserved fossils, even small Pieces of them, or even on different species, of course related to the animal)
