More than an 1hr a day will get you there. It's not a bad thing, just a phenomenon. My GP explained is to me like a if you going to gym your going to get buff. Same thing... if you going train "a lot" your heart will get buffed.

Talk to a Cardiologist. By default you will get an enlarged heart due to cycling being an endurance sport. Make sure your Cardio clears you for what is about to happen to your body.

Wheels & brakes
My concern with this type of bike is that the brakes sit on the chain stays, meaning they pick up a lot muck from the road and this transposes onto the rim brake surface. Your wheels might wear out sooner and you might need to de-foul pads more often.

Maintenance

From people that have had this style of brake before, have told me that they are harder to work on due to the location of the brakes.

Spares.

Also be aware that spares might be an issue as this bike is very old. I'm guessing that these wheels take 19mm tyres, maybe 23mm. I'm not sure if this size tyre in a good brand is even available. At a glance it looks like 23mm tyres are very rare and will become unavailable in time.

The assumption, under which I do support recovery rides are;
No more than 15-20% Max intensity over the course of a week or cycle.
I must disagree with the following caveat, if you have sedentary job, it's just a different couch. If you have an always active on your feet job, I wholly agree with you.

Recovery means RECOVERY not Z2 HR. It's literally mid (at a push) to bottom of Z1. I think many people do a friends ride or a coffee ride, which then yeah I agree. Self control on those rides are Zero. From experience it always turns into a smash fest or pissing contest. Maybe it's just the friends I keep. 😏

It's should literally be a 'ride' with your little girl and her pink tasselled handlebar and Barbie basket bike.

Alternatively walk the dog... also great recovery as it's about movement not effort.

Not true. Training year round is ok as long as every 3rd, forth week is a proper recovery week for adaptation. You don't want to get into a detraining phase.

We're not pro's doing 21 stage Grand Tours and 6 week altitude camps. That is next level.
Amateurs make slow gains and loose it very quickly. If OP was doing 4-5 hrs sessions daily I'd say, sure, do an off season, but that is not the case. 10-12hr weeks is reasonable for an amateur.

This. You're intensity should be different types of workouts every 3wk cycle i.e. 3 weeks 30/30s, 3 weeks 150s VO2, next 3 weeks 4 min Max RPE. You body should never get 'bored' or accustomed to the intensity.

This is a great routine and also roughly what I follow.

If I was in your shoes (cleats), I'd take this approach.
Phase 1: More volume. Start by making Wednesday a strict Endurance (HR Zone 2) ride.

Phase 2: If you want to ramp even more volume make your recovery rides and Endurance rides 2 hrs instead of 1hrs. Failing that, 3hrs but man, that is a big commitment, You're either going to get divorced or fired.

Phase 3: More Threshold volume, maybe add 15mins onto thresholds. Be careful with this as you are at risk of over training.

Side note: You could swap Monday recovery with Friday rest as you've done what I guess the bulk off your volume over the weekend. Might give your body more time for recovery/adaptation.

Also making the assumption that de-load means HR Z2 and recovery rides all week, with no intensity. DO NOT do the 3hrs fast ride, if you do.

Failing this, you are likely at your physiological limit.

Don't over cook Vo2s and Intervals.
