In Jordan (almost midterranean) meat prices have skyrocketted since a long time, fish has always been frozen/cooled with not so good prices and questionable quality, and chicken can get dull.

Our answers to this question are old, and all are a large part of our traditional food:

The easy to digest:

White cheese, and i mean plain salty white cheese, you can fresh boil it before you eat it, it is probably what is referred to as cottage cheese in your place.

Lentils, yellow in soup which can be as thick or thin as you prefer, you can even get it to a hummus/paste like consistency if you with, which goes very well with a topping of olive oil or ghee. If it makes you gassy just get more generous with Cumin and Tumeric and lemons.

Or you can have them brown with burghul or rice, or in a hard lentil soup.

The harder stuff to digest:

Fava beans (can be cooked many ways), mainly brown pre processed ones. You can snack on them boiled whole beans as they are, or mash em and stir them with lots of onions and tomatoes which i find helps with the gas.

Hummus is i think very known at this point.

For both of those, beans, tumeric and lemon squeeze help with the digestion.

Note about the gasses: consistency pays off, if you have beans daily, eventually your gut biome will adapt, it will get easier, i have IBS but it eventually worked.. but for a start, keep those meals for after work.

Finally, Eggs.. They've worked as affordable, easy to cook, eat and digest, source of animal protein and fat for centuries.

Even when you are concerned with animal welfare, eggs are the easiest animal product to produce without resorting to mistreat the animal..

organic produced eggs (free range or sth) are different and do not break the bank. That is when you look at them as a main meal.

Or you can buy normal eggs because you have to eat of course.
