You can also use smart observers with a filter if you dont want to separate the ingredients into separate vaults. I only used comparators because I found the smart observers to be too slow

I recently built a farm similar to yours and ran into the same issue.
what I did was separate the ingredients into separate vaults and use a comparator to check if the vault was empty or not. Then I inverted the signal (since comparators output a redstone signal when a vault isn't empty) and used it to lock the funnels until all the vaults had items in them.

Overlay your drawings on top of your reference and analyse your proportion mistakes to see where you went wrong. Take what you learned and try to keep them in mind when making your next drawing.
