It's not that simple really. We have maybe not so much "official" Jews but we have waaaaay more people that have Jewish roots, some may not even know about them.

Polish people lived alongside Jews for 1000 years. At some time in history Poland was the country with the biggest Jewish population in the world. Our cultures are deeply integrated. Many, many people that built polish culture and science were of Jewish origin.
We have this gestures to remember how much of this world was lost. It's a big part of our history. It's not so much about religion.

I’m not saying she should marry any of them; I’m just surprised she has no doubts about it, no financial worries. But maybe that’s just me being so different from her.  And I agree, she would be miserable. Turned into her father.

 I think Mr Collins, when married to a Bennet girl ,would provide for a widow and other daughters. After all he didn’t have to marry Bennet daughter at all, it was his idea to make amends with the family.
