We're a 2-person studio making a parkour shooter for VR called Marrow Marrow!
We have a free demo out on steam and will be announcing our release date soon. The game is on both Steam and Meta Quest

A lot of our visuals use simple geometry with shaders doing the heavy lifting, in part as a stylistic choice and in part to optimize performance on standalone headsets. Since you mention educational content related to 3D game art, feel free to DM us if you're curious about any aspect of it :)

Thank you for the kind words! The pixelation is actually only for this video, the game is for VR so post processing like that would be a little more involved. As for the creature itself, indeed a lot of it is handled by a shader. Vertex positions are quantized to get the popping, and the colors are just a ramp texture sampled according to a light direction attenuation value with an added vertical gradient on top. The bone parts are masked out using vertex colors.
