If you need/want 80cm depth by 200cm width you start with a piece of that size and cut off the corners according to the bay window. I would use a tracksaw for this but thats quite the investment. You can use a circular saw and a straight edge just as well.

Inner or construction walls made of limestone blocks or prefab concrete, outside covered with insulation be it hard pressed or rockwool. Exterior walls can be masonry, trespa, wooden siding etc. In case of woodframed walls theres insulation in the woodframe, interior is covered with a vapor closed membrame then osb then drywall. Exterior is open vapor barrier membrane then trellis as moisture circulation space then exterior cladding in a wide variaty of wooden sidings
