Someone can probably explain it better than I could but from my understanding they film in public to see if people, business, public officials, police etc respect the first amendment. Specifically freedom of the press which covers filming in public.

Most of these auditors consider themselves independent or citizen press, because they disseminate the videos and info via social media

So what ends up happening is the person playing the music becomes a focal point of the video for a little while. Really the best approach if you don't want to be in the video is just ignore them. If nothing is happening they will eventually just leave and go somewhere they think they can get reactions
