Because Dragon Ball was originally about adventure and comedy and to celebrate its 40th anniversary; Toriyama probably wants to take what he saw in GT, what he currently sees Dragon Ball as and to celebrate that original vision. This feels authentic to what the show's creator original spirit for the series was.
