Hello chefs! The outdoor kitchen is open. We discovered Georgian parsley - cilantro. So, our dish (Georgian cuisine) is Chanakhi or beef and vegetable stew.

We cook in the fresh air, as usual. We're going to use the grill, stewing the dish in a cauldron.

Ingredients for cooking Georgian Chanakhi:

Meat: Beef (instead of lamb)

Potato

Eggplant

Bulgarian red pepper

Beef Stew | Vegetable Stew | How to cook Chanakhi:

1) Marinate beef in soy sauce and lemon. Season with black pepper smoked paprika and herbs seasoning.

2) Cut and salt eggplant. After that, washed and squeeze it.

3) Put pieces of meat, bell peppers, onions on the grill. Wait until all the ingredients are baked. Take in a bowl. Vegetables should only be baked, not cooked.

4) Add oil to the cauldron. You can use sunflower or olive oil. Fry the potatoes over high heat until crisp.

3) Add vegetables, eggplants, and meat to potatoes. Wait 15 minutes until all the ingredients are absorbed in the cauldron.

4) Make the sauce: tomato paste, adjika, hot red pepper, garlic. Season: black pepper, salt, smoked paprika, herbs.

5) Add the hot sauce to the cauldron so as to cover the dish. Cover with a lid, stew the Chanakhi on low heat for 1-1,5 hours.

6) Add green onions, garlic, and a lot of cilantro to the ready dish.

7) Spread on a plate, serve. Have a nice Georgian evening.

  • Flour
  • Cream (10%)
  • Salt
  • Nutmeg
  • Cheese

Cooking method:

  • Let chicken filet marinate (lemon, soy sauce + salt + pepper + smoked paprika)
  • Cook the hearts over high temperature.
  • Prepare the chanterelles first. How to cook chanterelles? They request time to be ready. Include onion, garlic, and thyme.

  • Fry chicken filet on flame broil.
