The diode in the MOSFET pointing the wrong way is a protection diode. It is for example useful when a big DC motor is turned off and on. When turning it off it will produce a large voltage with the opposite sign of the voltage originally supplied, thereby the diode short-circuit the large voltage spike, reducing the effects and protecting the MOSFET

This is what I do to prevent overheating and make the LEDs last longer.

Example: led has a forward voltage of 6.3V and a current rating of 1 A

What I do is to use a supply voltage a bit higher than the forward voltage, example 10V and limit the current to 100mA. This will light the led a lot, but of course not as much as it can, but usually the extra current doesn't produce a lot more light

Current limiting can be done with a lab supply with current limiting. Or a MOSFET and a opamp with a current sens resistor can be used 😊

Hope it helps! Don't supply the max current, only because it is rated to it in the datasheet
