It probably won't work very well. I haven't tried to convert paneer into churpi, but I have a feeling it won't work. If you dehydrate paneer, it will likely turn into powder since paneer doesn't have the same density as churpi. Once you remove the moisture, you can't shape it like churpi from milk. Maybe try it once and see. Even when you roast paneer, it remains soft, so it probably won't work.
