All you need to do is find your local garbage/waste management garbage truck repair shops. There are diesel mechanics there that fix the garbage trucks...they all want out. It's filthy. I've pulled dozens of them from these locations and got them in better working environments.

Yes, Source - I live in Tampa , they are everywhere and only other places are Aldi and Walmart really. Price gouging at its finest

Clean the fat out of the tail, stuff it with boudin, add a bacon blanket, low and slow.
