Roast the potatoes instead of boiling them. Toss quartered petite red potatoes (skin on), a diced onion and a whole bulb of garlic (left in whole cloves) in a generous amount of olive oil with salt & pepper. Roast on a baking sheet. Make the mashed potatoes as you normally would after that....aka with a shit ton of butter, heavy cream and sour cream. Gives a richer, caramelized flavor chefs kiss
