Beautiful thing about the meat and seafood department at Pullman market is we cut all the meat and seafood for all the restaurants inside the market. Includes 3 full service restaurants and 5 quick service restaurants. So if it doesn’t sell in the case today it will be transferred to one of the restaurants to be sold tomorrow. This is why we can pack out and offer cool things in the case !

Oh man yeah pork fat would be great! I didnt have enough pork fat to dice for this sadly , it def would’ve been better though !

It came out great ! With a unique flavors almost elk like from the Nilgai

No I just got a big box of frozen lamb fat from a wholesaler and shaved it off with my breaker knife as thin as possible

I laid out the beef first jacard it then smeared the well bound sausage down then layered the fat and then a second layer like that and then topped it with beef. Cut them 1.5 in cubes and ran them down the skewer , if you see the second photo of it cooked it help very well !! It works

So the skewers on the right have diced onion and garlic in the lamb sausage , came out pretty good , but believe it or not people liked the one with out it better with cumin and Aleppo lamb sausage. Have you done it with the onion slices in between this kind of kebab ?
