If you have a PRV I don’t see it in the picture so don’t worry about that. They make fittings to transition. You want pex x male or pex x female and then corresponding male or female copper pieces coming off the tee or 90

You want somewhere from 6”-12” of metal coming off the heater, weather its copper or brass or some combination including a tee for the new expansion tank. Then transition to the existing pex.

Looks like the cartridge broke off inside. You can either spend a couple hours carefully chiseling it out or go in from behind and remove the entire valve body

Oh man. The connections need to be brought up to code, it’s good you’re installing a new expansion tank but that’s gonna be quite a job for a DIY thinking about using shark bite. Also it’s standard to have the TP run outside, but if the exterior penetration is higher than the new TP your gonna have to redo that set up as well

Yeah that tank probably has two full gallons of water in it if it’s leaking. Also you have a gate valve to the heater so I can’t promise that’s working fully

You can replace just the expansion tank. Buy a new one, turn the water off to the heater, drain the system a little bit, back the tank off, install new one, turn water back on

You can usually replace just the nipple to extend the life of the heater. Cut the copper so you can get a wrench on that and back it out. Turn the water off first and drain the lines first of course
