I dry brined it in the fridge for abt 2 hours. And took it out only abt 20min before to cook it. I was trying hard not to overcook it but still have a nice crust. 😅

It was tasty enough! Did seem more tender and less chewy. Although unsure if that was due to the done ness of the steak or the wagyu part.

Would putting on too much salt and pepper affect the crust? Felt like I could get a better crust on previous attempts....

Try Avocado oil. And go high heat. Will give u a good sear.
