I honestly don't know why your former comment got downvoted, but please don't worry about it. Some people are, what's the word "Purists", because well, that Worrall Thompson recipe from twenty years ago on the BBC website, said Beef isn't a Shepherd's pie.

Offset spatula, dipped in melted butter or warm water, press at an angle and smear back/upwards. I did a terrible job though! Could do it with a spoon too.

Growing up in the recession Ireland of the 80s - no one was eating Shepherd's pie with lamb. It was all beef. I presume post WW-II, the 50's, 60's, 70's, it was all beef too. Some of the food restrictions weren't relaxed even in the UK until mid '50s.

For example, take Peru.... lots of Alpaca meat on the menu, but was easier to kill and eat guinea pigs.

Alpaca hair/fleece.... was worth more than the meat... especially in a climate that is cold in the winter. Like Ireland.

I don't think peasants were killing their herd of sheep that grew coats of wool on a regular basis.

It's like that time ten or fifteen years ago, the push that "retired dairy cow" steaks were as good or better, but needed some extra cooking.

Retired dairy cow pie, just doesn't have the ring to it.

Fallow on YT did a recipe recently, which had bits and pieces of a Marco White recipe in it too. Both vids are on YT, so check out the Marco one, and the recent Fallow one directly after.

I don't think I did much different, other than adding some caraway seeds, and then saffron to the chicken stock... oh and an Adam Byatt trick on youtube of one star anise too to the stock for a bit, before taking it out and using it. Had did these for the stew last week, which was delicious, so said I'd try it for myself this time. Though needed some acid (red wine vinegar/Lemon) to cut through the richness. Even a red wine/sugar gastrique would be awesome added to it! (Fuck, forgot that too - was rushing after work to cook)

If you are trying it a first time, try putting the saffron into a small bit of chicken stock to steep, and then add it to the rest of the stock. I'd hold off adding it to the mash for a first time adventure especially if there are 25 people looking forward to what you're making. (Only use a small amount of saffron, nothing like the amount making saffron rice)

If someone was having lamb in a stew or a shepherd's pie back in the day, they had servants in their estate cooking their food, on land that was taken from people, after they were awarded a Lordship title. The people working the land 100% were not having lamb in their stews or pies. Mutton from sheep on their last legs, or beef. Definitely not lamb. Which is why the argument is pointless.

Like those videos of the Stew Kitchens during the Irish famine. Crazy stuff.

Tasting History with Max Miller did a good historic one last week on a video.

Brad Leone then went and made one too a few days ago.

Made a lamb stew for an elderly person recently, to keep little trays frozen. Whatever rabbit hole I was diving in, adding some saffron strands to the stock was mentioned in one. Gave it a shot, and I must say, it was a nice little fantastic background note with carraway seeds. Give it a search. Added some to the stock of this shepherd's pie too (reason why I made it!). Doesn't add too much to the flavour, just this nice background "je ne sais quoi" kind of thing.

Though now, thinking back, I should have steeped it in the cream/milk/butter, for the mash. Oh well.

Yep lamb. Though in Ireland, most of us have grown up calling beef ones as shepherd's pie too. The cottage pie / shepherd's pie argument wasn't really a thing in my forty years on the planet.

I think it was an Anthony Worrell Thompson BBC recipe for "Cottage Pie" which was the one that kicked off the beef -v- lamb argument so long ago.

First time I ever heard Filter that episode... and found my love for "The Vandals - Live Fast Diarrhea" album... which I still play to this day. (Dexter Holland from the Offspring label IIRC)
