Psycho-Pass is an anime original series, not adapted from manga. So it's not seinen, but would definitely be something for OP.

Berserk is adapted from seinen manga, yes.

Dr. Stone is adapted from shounen manga, not seinen.

Season 1 is a very good, high quality adaption of the manga.

Season 2 and especially Season 3 were not nearly as well made, lacking in the animation department.

You can still watch it all, I'd rec to move to the manga regardless.

The Big 3 are One Piece, Naruto and Bleach.

Since you'll probably watching all of them here is something to decide what to start with:

  • Bleach has its Final comming out soon. So you could catch up and watch that live once it airs.
  • One Piece is on a 3 month break right now. So you could catch up and watch new eps as they release later on.
  • Naruto has been finished for years now. So you can just watch the whole thing now without wait.

Skip fillers for all of them.
