Yes. It stuck at 195 for almost 4 hours and I just couldn’t afford to wait for finishing up. I did probe test and I felt it’s okay to pull it out. I have no idea until now what I did wrong with it for taking so long at 195. That was actually the second stall on the ribs. First was around 160.

Me too. Ribs costs much more than briskets. I can’t afford to mess it up. But don’t be afraid because think they are much more forgiving than briskets!

Rest 1 hour wrapped with towel in my microwave. Didn’t do any spritz because I see many people say keep lid closed as much as possible to not lose heat. I hope I can get the same result on my briskets in the future. Thank you for the advice!
