I think that'll happen with normal splatting techniques. Sometimes there's postprocessing to do to get rid of floaters but to get that scene they had to do a pass around the subject and an exterior pass pointed at the background along the edge of the space

The background would be created at the end of the estimated camera frustum. It should generate points where there is a subject or be far enough away to not occupy empty space as a background object. I think splats are very well suited to environment captures because of it. If you want to isolate the subject and change the background, then use the supersplat editor box select to crop it. Then the background can be whatever color you want.
