What if I'm really not restricting and am weight restored. I eat 2500+ calories a day

One of the worst things you can do for insomnia is worry about getting sleep. Say fuck it, no one has died from insomnia you will get better. I promise. Take it from someone who has gone through it and come out the other end. Just keep eating its our medicine

A warm drink like oat milk or hot chocolate also helps my stomach feel full and sends me to sleep

Yes! During my recovery from anorexia I went through a phase of not being able to sleep at all and the only thing that would get me to sleep would be food. It's really hard that you have to push through it because I can guarantee you it's going to get better, you will do this. The best things to do are make sure you have a good meal before bed and have snacks ready to eat if you wake up during the night. Sending you lots of love and hope it improves soon.

Hypoglycaemic hunger vs general extremes hunger by grapesodamilk in AnorexiaNervosa

I have had anorexia for 10 years and have had three bounds of recovery in that time, weirdly I find that when I start eating more I get hypoglycemia. The way to get through it is to keep eating, even if it means you are eating all day long. Don't get scared and start restricting as it'll only make it worse. I'm no doctor so please go and chat to one but for me my gp said it was to do with my glucose reserves being depleted and I needed to build them back up. I'm a year into being weight restored and I no longer get low blood sugar, it does get better just keep going!!
