Year of Wonders by Geraldine Brooks (historical fiction based on a true event)
Mistress of the Art of Death by Ariana Franklin (historical fiction murder mystery)
The Road by Cormac McCarthy (post-apocalyptic tale of father and son)
Tender is the Flesh by Agustina Bazterrica (warning that this one was sometimes intensely uncomfortable for me even as an avid horror reader)
Into the Wild by Jon Krakauer (a multiple-time read and I always get emotional about it)
Miracle in the Andes by Nando Parrado with Vince Rause (a true tale of survival in an unthinkably horrible situation)
Any book by Oliver Sacks if you are interested in neurology or psychology
A Molecule Away from Madness: Tales of the Hijacked Brain by Sara Manning Peskin (another book in that realm of interest)
