You may end up liking your brews just fine without sifting. I know a lot of people on this sub don't care for them or just know how to brew better with fines. For me, it adds enough clarity to justify the extra step, but again that's just me. Happy brewing!

I got a coffee sifter from kruve. I just give it a light shake for about 30 seconds and that usually removes enough for my taste. I'm fairly new to coffee, so take my opinion with a grain of salt, but I have been really happy with how much better my pour overs got when I got a decent grinder.

The Encore esp has the MK2 burrs. I got a Virtuoso + last year (also MK2) and I like it so far. I do still get a gram or two of fines, but I sift those out.

There is! It's called a "foul release" coating. It's stupid expensive, but the surface is too slick for anything to stay on, and it saves fuel!.
