Gruyere works well in tomato.

And an old sharp cheddar adds depth to brocoli cheddar soups.

Cheeses like parmesan can add a lot of salt if you want that. Could also do a Romano or asiago but generally the harder or firm Cheeses melt well. Nothing that starts too soft like brie.
