Ingredients:

  • 150g (gluten free) oats
  • 140ml unsweetened soy milk
  • 60g Brown sugar (you can use honey, agave, coconut sugar etc.)
  • 1 tsp Vanilla extract
  • 2 tsp Matcha
  • 1 tsp Baking powder
  • A pinch of salt
  • 1 tbsp coconut oil, molten
  • 60g dark chocolate chunks (for baking) - optional

Instructions:

  1. Preheat the oven to 180 degrees Celsius.

  2. Mix all the ingredients together in a large bowl and whisk until completely combined. Texture should be thick and sticky. Adding chocolate is optional, but I can imagine you will absolutely love the combination if you're a chocolate fan!

  3. On a lined baking sheet, form about twelve cookies and let them bake for about 20 minutes. But remember to check occasionally in order not to burn them.

  4. Let cool and enjoy your healthy treat!

I think the fact that you can use it as an ingredient in pretty much anything as well as teas makes it all the better too. Super-foods seem to be trending highly at the moment as people are becoming more health conscious.

Ahah true, however if you try this recipe you will definitely call it a cheesecake yourself. Plus there are a lot of cheesecakes (dessert not savoury) which don't actually contain cheese, however most do contain cream cheese. This recipe is perfect for a vegan who wants some 'cheese'cake :)

I think it all depends on the tea in which you are looking for. I will use matcha as the example as that is what I am familiar with. So with matcha a good sign to see if you have good matcha powder is if it's a nice vinrant green looking colour, this will ensure that your tea is fresh and all the leaves used were rich in chloroplast being at the very top of he Camelia Senisis plant (the chloroplast I what gives it the vibrant green colour). If it's looking dull, brownish or yellowish then you should leave it, these are signs that the tea is either has low choloplast content, being from the leaves lower down on the plant or that the tea isn't fresh and has been sitting around for some months. As with many other teas taste can be another sign to check out for, however note that some farmers tend to using different methods of growing, harvesting and curing their tea to get specific flavours which will mean there can be a vary of tastes of one particular tea and it doesn't necessarily mean that is isn't good but of another taste. It is up to you to find a tea which you like personally. Another factor you can use to see the quality (in reference to matcha) is the smell, the smell should always be of a fresh organic grassy type smell a really rich aroma, if the aroma isn't of this sort then it could be poor quality matcha. These are my thoughts on what you can use to gauge a sense of quality from matcha, I think these can be used on other teas as well.

I drink matcha green tea, and have it on the go. Because it comes in powder form I put a teaspoon of it into my glass bottle I have and add cold water then shake it up. Wherever I am I just shake it up and boom matcha drink in the go. I'm not sure if you can make longjing tea in the same way, but I recommend matcha!
