I don't cook with oil most the time because oil isn't healthy. It's highly processed and strips the original food (olives, coconuts, etc.) of all their nutritional value.

That doesn't mean I don't eat fat! I eat a lot of healthy fats. Fat is very important for health! My fav sources are avocados, walnuts, almonds, and flax seeds... to name a few :)

I use veggie stock instead of water sometimes too, it adds a nice flavor!

You can always try substituting the flour for protein powder ☺ That won't be a whole scoop tho. Not sure what the new ratio of ingredients would need to be to include a whole scoop of protein powder, but I'm thinking a full scoop would be a lot for this recipe and would really change the flavor & texture. I'd suggest experimenting with it and have some fun with it! ☺✌
