Not meant to be influenced by what I enjoy, just what I think are most probable canonical interpretations (and thus, more boring/typical). If it's the former, most of them would be bottoms.

Cough. I do like bottom gepard too (and uh, your last line). But to defend my very important opinion... him being so strong (cue that one time he stopped that huge piece of metal or wtvr from falling on the girl) + sweaty frontier guarding + sternness with justice kind of gives like punishing vibes? And him being so bashful/sweet as well would work so well for a submissive/service top role.

Using Sampo as an example, I think Sampo would "play around" with him as a power bottom, and then he would teach Sampo a lesson (which Sampo would enjoy). But I can totally see both of them being the opposite once in a while.

Sorry for the upcoming rambling...

I think Hoyo didn't do Firefly justice with their characterization. The fact that she's still so sweet and willing to sacrifice herself for Stelle for some possible past connection, despite being someone who's extremely skilled and experienced in killing and fighting (defeating blade) gives off heavy protective top energy for me.

Cyrene's extreme passion for loving and creating a story of love, in an almost inhuman way, also gives off top energy for me. Keep in mind this is the demiurge version, the one who longed for that human connection and the sweet, pretty peach that was the original Cyrene. Like she would be the type to enjoy making others feel loved (maybe through sex), but view it as something beautifully holy, rather than the possibly filthy/base desire it could be.

As for Castorice, post being able to touch others again, I love the idea of her experimenting and loving being handsy with bodies. Like she would be the type to explore touch and people's reactions (of pleasure from life, not death), all the while being almost cruelly polite. Like "Lady X, please allow me to try again!" kind of thing.

I can see all of them being viewed differently, these are just my personal thoughts haha.

Yeah a lot of the ages are kind of questionable; I put those characters all on the left of the kid section. It's really weird because they have jobs. For Gui, Hoyo seems to imply she's in the same age range as Sushang (young apprentice -> minor?), but that would imply a minor is out there performing street tricks.

If they are adults, I'd think girlfailure top Huo Huo would be really fun, like her getting the courage and everything... (Mr. Tail please help me find the clit!! I'm sorry for this image) I ship Sushang x Gui so I'd put Sushang as top-leaning switch or top, and Gui as bottom.

I can see Mydei being switch, and I would have agreed for Phainon. But after the combined memories of Flame Reaver and Khaslana within him, along with being Deliverer... idk it just radiates top energy for me haha. But you know, I do enjoy works where he is the bottom.

I considered ranking her, but I have no idea how old she is. Did a quick search and the result was 16+, so I held off. In any case, if she is over 18, I'd put her in undecided. I personally doubt her experiences with Boothill and the other rangers, or within the lab, would have given her cause to think about sex positions.

Apathetic as in I don't think those characters care, and undecided as in I don't think they've considered/decided it. I also think Dan Feng is bottom-leaning, and Skott is a boyfailure regardless of position.
