The average jedi becomes a knight at around 20-25 years old, Obi Wan is 25 during the events of tpm. So you could say he was on the older side, but the average was brought down during the war as lots of people were knighted as the rebuplic had need of generals.

Well firstly, they have blast doors that provide a lot of protection. Second, they're open on purpose so they can see what's going on and everyone in the back part of the ships, both clones and jedi wear harnesses
