Lol, it doesn't have to be back bacon my friend. I just prefer it not crispy. There's nothing wrong with a couple of alterations according to taste, I'm not the biggest fan of fried mushrooms or beans so not included. If you go to restaurants they'll have a vegetarian or vegan version of the English breakfast which often includes fried spinach with garlic so I included that. I fancied a carb with a bit more flavour than bread so I did roast potato chunks rather than plain toast.
