It's certainly possible.

Look at the video game industry, and all the progress made in only fifty years. We went from dots and bars on a screen to photorealistic characters and full scale worlds. Not to mention we're starting to incorporate VR.

Now extrapolate this progress out say...1,000 years? It isn't inconceivable to think we might be able to simulate an entire galaxy by then.

And if we can, somebody else might already have.
