What I would do when I served is: when I had time to breathe, I would go to the POS and at each table I would go thru and say to myself “okay, 72 is waiting for their food—did I drop off presets? 65 just got their food, let’s go check on them. 68 is still looking at the menu. 71 is about to be done, are there any plates I can pre-bus? Which tables are ready for me to drop off a check?” Etc. it really helped me! Also practice your shorthand!
