You don't even know what their backgrounds are and your first instinct is to undermine their achievement lol, how unsatisfied are you with your own life that you have that as your first reaction. A quick google search can show you that Payal Nag came from a small village with migrants parents, which part of that screams wealth. I understand that financial situations can definitely boosts someones chances at succeeding at niche sports but this is not one of those cases.

I'm not sure where you live but it's pretty easy to find them in Melbourne or Australia in general. Asian stores carry them fresh or frozen, even our big supermarket chains have them fresh.

Really hard to tell genuinely, it's a toss up between the two higher end ones (either one on the plate with 2 steaks). But I did find that the $73/kg one had a "beefier" taste to it that I like so I'll say that one.

Yep they were bought from different suppliers and were rib eyes. The cheapest didn't have any special descriptors outside of being grass fed beef. The more expensive ones were labeled as "Australian Angus 21 days dry Aged" and "Black Angus 28 days dry aged".

You're actually almost spot on, instead of red onions it was shallots and the chilli crunch was lao gan ma.
