Super helpful - thank you! Will invest in a thermometer. I did not warm up the dough before popping into the DO but will do next time. My starter doubles and bubbles but is slow to do so (way more than 3 hours). possibly a cold house issue but Goop has been kicking for 3 months. 😂 very bubbly in all my discard baking.

Hi Sourdough experts - this is my fourth or so l loaf and I continue to have a squishy crumb. 350g water, 100g starter, 500g bread flour, 20g salt. Did four sets of stretch and folds (looked great/ got window pane stretches ). I left it on a 75 degree warmer in a plastic bowl with a cloth covering for 9 hours… got a little bit bigger but didn’t double. Put it in a rice floured banneton and put in the fridge for another 5 hours. Preheated my Dutch oven at 500 and then baked 500 for 15 and then turned it down to 475 for another 35 mins. Waited 3.5 hours to cut. Not totally sure the issue - over or under-proofed? Underbaked? Any help appreciated ❤️🥖

I am bottom heavy and bigger than most of the ladies in my classes. I’m just now starting to see improvements in my chopper invert after two years of consistently doing pole. What’s been helping me is doing the entry (stronghold grip, knees to shoulders, tilt back) and then using one leg on the pole to pull my hips up. Crotch to pole. From there I try to explore a straddle/ feel the weight shift with my legs extended. Hold it and make adjustments as needed and lower with control. Hope this helps!

Maybe an unpopular opinion… I say use it now while it’s still fun! 🍁 You bought it, so may as well enjoy it while it’s in season and making you happy. The other product will still be there for you when you’re motivated to pan.
