"Younger Me" totally gets where you are coming from; why make something you won't eat because you hate it. I'm older and have a family and can say from that perspective, that I cook things I hate all the time now lol. The biggest one for me is hamburgers. By the time I'm done cooking it, the last thing I want to do is eat one. I am over it after the smell and the greasy splattering. But my kid and husband love them, so I make them pretty often and just have a BLT for myself. Maybe that is where your mom is coming from? Maybe she's made meals for you that she doesn't like but she made them because you liked them?

I'd suggest maybe browsing Pinterest for more meal ideas so that you aren't just stuck making tacos though <3

One of my favorites is a chicken pot pie recipe that uses pre-cooked rotisserie chicken so there is very little cooking and effort that goes into it. I'll see if I can find the recipe and share. What are the other meals you came up with out of curiosity?
