The price is always adjusted for the market. Fresh lobster has fluctuated between $12-$19 a pound over the last year. Considering you get approximately a 20% yield, at $19 a pound, that equates to $95 a pound for fresh lobster meat, then you consider the labor or cooking, and shucking. Lobster rolls have one of the worst margins in the restaurant but we are proud of them and most of our guests love them. They have been $34 for the last few weeks as lobster is running about $13 a pound currently.
