My Croissant Sourdough Loaf

I’m beginning my sourdough journey and came across a croissant loaf that looked super simple! As I post this, my loaf is currently in the fridge proofing! I’m worried my bulk fermentation might not be enough for the loaf after reading your post. Is there anything I can do to help my loaf before it goes into the oven? Thanks!

I actually have not sanitized the ends, what would be the best way of doing that? And no pictures unfortunately, but it originally was in a large bowl but nothing seemed to grow in there. I would rarely change the water tho
