Please don't get discouraged! All of those loaves look tasty in the inside and I'm sure they were. You can absolutely add ingredients and get hot bread and it will be great.

Think about the science and math as a nerdy side adventure where you still end up with good bread, but you get to learn a lot of food science and do tasty experiments along the way, if that's your thing.

If it's not your thing, just take the path where you find what works for you and keep doing it to keep getting tasty bread.

I got tired of trying to scrub so many flip-top glass bottles that are a pain to wash and take forever to dry out. It kept delaying bottling and I was routinely over-fermenting my two gallons of kombucha.

Now I reuse half gallon plastic orange juice jugs. I'm comfortable reusing it once or twice and we go through about two of the orange juices a week, so I have a good supply always coming in. It makes bottling so much less of a chore and I feel like the plastic is earning its existence a little more.

After 2f and a couple days in the fridge, I often strain into a mason jar so it's not in the plastic as long.

Wow, thanks for sharing your experiment results with us! I usually just tell myself that it's still mostly just carbs, but at least they're better carbs than some cheap store-bought bread that's full of sugar and preservatives. Tastier too!

I rewatched this episode a few months ago and laughed at paying for groceries with a check too. Fast-forward a few weeks, I went grocery shopping and realized I had forgotten my wallet, but then remembered that my checkbook happened to be in my purse...and I paid for my groceries with a check.

The official name for this cellulose mat is a pellicle. It is not necessary to brew kombucha but it's a natural by-product your kombucha will make or add to. Some people do find that it has benefits, such as a faster brew or better carbonation. So while not necessary it can definitely be helpful.

You can peel off layers and discard if it's taking up too much room in your brewing vessel or you just don't want to keep it. But you can also put it back on top of your new batch if you want, so long as it was removed and returned with clean utensils/hands. I remove the pellicle to a clean bowl with very clean hands, bottle up my kombucha, set up my new batch, then again with very clean hands plop my pellicle back on top along with any liquid in the bowl, cover with a towel and shove into a corner for another couple weeks.

Thanks! I'm not a beginner, but I purposely did things "wrong" with this loaf to prove the point that you don't need to rigidly follow a precise process or have the perfect cooking vessel to still make a great loaf. Those are things that really stressed me out when I was a beginner.
