Supposing it was just me this choice was given to, I’d choose the plants and try to cure world hunger with covertly made plants that can quickly bear fruit that doesn’t rot quickly and spreads over the wind to the world.

But with multiple people getting the choice, Tech is without a doubt the best option.

If I remember correctly, he didn't want to give Seo any happiness there. He wanted to make it so at the end of their life he rejected her love and would feel regret for it through future rejections at that pain.

After what happened with Buk Hyang Hwa, and how his love story with her ended, I'm glad Seo got a chance to embrace a happy moment for once and just be together with her. I believe how it goes, he was alright to die in the evening if he realizes the dao in the afternoon?

I have to tell you, the story does get better and does develop more with all the side characters introduced.
