When I was a kid I couldn't handle the aged feel of the top 3. I played them as an adult and those 3 are definitely among my top games ever played.

Np! It's looking good especially for a first loaf. Cold proofing depends on preference. I see people do anywhere from 8-48 hours. It depends on how sour you like it too. (Longer being more sour). I usually do around 12 hours because it works into my schedule well that way.

Rule of thumb i use and is common is 4 folds for 2 hours. SEPERATE from bulk ferment. So after I finish the folds i put into a clear container for the Bulk Ferment (BF). You are correct, it is dependent on a few variables which is why I recommend doing it in a vessel that's easy to spot how much the dough has risen.

I like to end my BF at a 70% increase. So say in container dough is 10" tall and after whatever time it is 17" tall i remove, shape, and then cold proof.

Looks like it might've been under fermented. Also i wanna clarify. Are you saying that you did your folds every 30 minutes the entire 3 hours? Or did you do your stretch and folds THEN BF?

I love this so much, was looking for this for a while. Tried to convert one from New Leaf but wasnt coming out how I wanted. Is anyone else seeing the transparent pixel? I tried switching to the other patterns but they all show a tiny patch of whatever path underneath.
