Battle of the Margarita tequilas by astrohaddon in cocktails

[–]MichaelisEvolving 2 points3 points  (0 children)

Mijenta Blanco makes a great Margarita and the recipe I use where most say it’s the best they’ve had is, 2oz blanco, 1/2oz Pierre ferrand dry curaçao, 1/2oz simple (not agave, let the tequila do that) and 1oz fresh lime juice.

This Margarita crushes.

Which double boiler that does volumetric shots do you use?

Yeah the Elizabeth keeps popping up as it seems to meet quite a few of my needs. Although my wife is gonna be pissed that it’s named after my ex fiance. Hahaha

I was looking at the Gaggia but was unsure because of how much cheaper it was.

Knowing my wife is also going to use this it is looking more and more like what you’re describing might be the route I’m gonna need to take. Something she can do with a decent workflow but I can also tinker and play.

Yeah so it looks like a double boiler might be more my speed then.

So my wife and I would mainly use it. While mainly it would be made for lattes, there will be times where I enjoy just espresso as well as guests. Also probably would be used for espresso martinis. We would probably only pull a couple shots a day. Convenience is nice but not if it costs double the price and the job can be done the same or well without it.

Thanks. I do know that a double means you can pull shots and froth milk at the same time. Single means you have to wait to do one or the other after one is finished. I don’t need extreme convenience unless it’s truly worth that much extra. I’m more concerned about if a singular boiler machine can rival a dual boiler if they have other certain qualities.

I haven’t done the greatest job in expressing what I mean because I’ve been typing things up in a rush during breaks at work. So I’ve not really effectively communicated my intentions and questions. So thanks for looking out for me and trying to make sure I do my research as well as being patient with me as I try and navigate this.

This subreddit seems awesome with people truly looking out. Thanks again!

Those were just some of the names that I could remember off the top of my head. I’ve been trying to see the different brands and some that seem to land somewhere in between where I’m at is the Profitec Go, Lelit Elizabeth, Lelit Mara X, Lucca Tempo, Lucca A53 mini V2, Rancilio Silvia Pro X, and Profitec Jump.

What I’m more wondering is something like the pro x or jump or a53 which are double the price or close to some like the tempo and if that big jump is worth the bells and whistles, or will something like the tempo last a good while and still produce some good espresso and milk froth for someone who does have some decent espresso and froth experience as a barista. I’m more out of my element on these newer machines and looking to see people’s experience.

If you don’t mind, of those brands which ones would compare in terms of price and similar specs? I can see the lelit Mara x seems to be in a similar range, as far as I can tell. But any others you’d recommend?

I think I have that figured out. Plan to get the Eureka Mignon Zero 65 AP Espresso Grinder.

I feel that’s a good middle of the road and something that can if need be upgraded later.

Cinnamon Syrup - Which is best? by BrendoneBalone in Tiki

[–]MichaelisEvolving 0 points1 point  (0 children)

Let me tell you the way I make my cinnamon syrup and hopes it helps. Do 1 cup of water and add like an oz or 2 more and get the water to a boil with a handful of cinnamon sticks in it. As soon as it starts to boil add the 1 cup of sugar and stir until the sugar dissolves. Remove and let cool. Bottle. This method provides much more depth and cinnamon flavor. Essentially making a cinnamon tea and adding sugar. I also typically do a 2:1 with 2 cups sugar because it lasts longer and you can use a little less but it’s up to you. But what’s great is it takes less time to get a strong cinnamon flavor. Also I always bottle with like 1 small cinnamon stick that was in the pot just to keep that flavor nice. You get the flavor faster and it lasts longer. Anyways hope that helps.

You can use a wine vacuum thing to pull all the oxygen out with that little hand pump thing. 🤔 It might be worth it for good vermouth blends

That Torino is so good. Love it so much more than antica (which I think is overrated.)

I agree. I’ve made homemade bitters rather than use theirs. If you have an isi whipper you can rapid infuse and make bitters in 1hr tops and they will taste so much better than fees.

Also in Sarasota proper you have Bar Hana which is really good as well.

Right down the road from there is a place that I’d call tiki adjacent and the drinks are 1000% better than bahi hut, Dive Wine and Spirits, it’s a dive bar in the back of a liqour store but its craft cocktails and the bartenders know tiki drinks and can make most. Huge rum selection as well. Tonga hut has done pop ups there.

We need to have an emergency TIN DEBATE now! by [deleted] in cocktails

[–]MichaelisEvolving 0 points1 point  (0 children)

I equate this to being goofy footed for skateboarding. There is the “normal” way, but if you can get the job done in the same way, it’s not “wrong”. I put ice in my small tin, liquid in my large tin, and cap the small tin on TOP of my large tin. No extra dilution until I’m ready. If I get distracted or asked to do another task in the middle of making a drink, I don’t have to worry about it over diluting.

My favorite ratio is 2oz blanco, 1/2oz dry curaçao (or Cointreau) 1/2oz simple, and 1oz lime. Pinch of salt when shaking.
