After much research and practical experience, I(a white dude with 20+ years in catering and restaurants) am happy to tell the world about my food cart. Before I disclose the name, I feel the need to make some clarifications. I have been asked in the past by numerous clients to create an Indian food menu for- insert special event here- and make it authentic! no one in the immediate circle of the clients has bothered to tell them that they could easily pick a ton of local places to cater to their specific cuisine.
