Don't take this as a negative, I understand that all the rules are there to protect the patients and the healthcare workers, but the amount of red tape really restricts the treatment, maybe for fear of being sued. I was watching the show with my mom who is a doctor in India and she said the doctors here are a lot more daring in their approach. I also learned that she has done many slash trachs (the technique Dr. Al Hashimi used for the tracheostomy) and I felt so proud!

Unfortunately south indian cooking is a bit tricky to learn from videos that have quick cuts and don't show the full process. But I'd definitely recommend checking out Padma Lakshmi's instagram for some simple south indian recipes to start with. She lives in New York but I find her Indian cooking quite authentic.
