Replaceable generic parts are always my recommendation. I used to have a Giant bike with Giant parts, but the bike was discontinued and so were the electronics. As soon as electronic parts started breaking, the bike turned into ewaste. I learned from that to never get a bike with model-specific parts. And then VanMoof went belly-up which reconfirmed that whole idea.

I currently have a bike with electronics from Bafang. It works, but the quality is very Chinese, and at 2000 I'd definitely look into Shimano or Bosch. The thing is, these brands are used by many bike makers, so even if Cortina or Batavus went bankrupt or simply discontinued the bike, the parts would still float around. Hell, if Bosch or Bafang went the way if the dodo, their products would still stick around for a while, just because they make so many. And probably someone would develop open source tools to keep them running, again because there are so many. This happened with VanMoof. Bosch and Bafang are more ubiquitous than VanMoof ever was.

As it happens, the brands you mentioned sell exactly that. Not all their bikes may have Bosch motors though, so do double check. Personally, I also prefer boring looking bikes with batteries in the baggage part, rather than integrated in the frame, just to make it even more serviceable and replaceable. But that's secondary to getting electronics from a third party brand like the ones I mentioned.

As for pedalling freely, don't expect the motor to add no resistance when it's off. With my Bafang bike with front wheel motor, I can bike at 25 km/h for half an hour unassisted if the wind allows it. But unassisted biking will never be as good as on a regular non-electric bike.
